Matcha Protein BaseBalls – Vegan Recipe:
1/4 cup pumpkin seeds
3/4 cup oats
3 tbsp raw cacao powder
1 scoop vegan chocolate protein powder
1 cup soft dates (soak for a few hours to soften if needed)
2 tbsp melted coconut oil
2 tbsp unsweetened almond milk (add more if needed)
small handful cacao nibs
1 tsp matcha powder
- Blitz the pumpkin seeds and oats to a fine powder (nutribullet is perfect for this)
- Transfer the ground seeds and oats into a mixing bowl
- Add the cacao, matcha and protein powder to the bowl and gently mix together
- Blitz the dates in a food processor until they become a sticky ball all together
- Break up the date ball into smaller chunks and add to the mixing bowl along with the melted coconut oil and hand mix all together. Add the almond milk (can use coconut milk also) and cacao nibs, and continue to mix by hand until you are able to roll the mix into balls. If the mix is very dry add more almond milk.
- Always try a small piece of the mix and adjust according to your preferences (if you need sweeter add more dates, or if you would like more chocolatey add more cacao etc)
- Roll the mix into approximately 18 balls (roughly 18 grams each) and place in the fridge for a few hours
- Option to dust with extra matcha or cacao powder
